Summery Forbidden Rice

This rice is a perfect combination of crisp, sweet, salty, sour, and an overall punchy burst of summery flavors. I had a rice similar to this at a new restaurant on the North Fork of LI; black rice with charred pineapple, crunchy charred radish, and lots of cilantro. I made a soy-citrus dressing (with just a dash of fish sauce!) and it was delicious. Healthy too.
