Potato Egg Salad with Dill, Chives, Cornichons and Crispy Prosciutto

Potatoes are my favorite food, period. They are so versatile and one of the best ways to eat them, is a summery potato salad. This is actually a pretty classic recipe with my own ~twist~ The prosciutto is probably optional but the dressing of chives, dill, and cornichons is not. If you don't like mayo, just make a classic vinaigrette with 3 parts oil to 1 part vin / mustard.
