Southwest Cheese Dip

This was a happy accident.


This Southwest cheese dip was born because I had an abundance of pepperoncini and no idea what to do with them.


Alas, I googled, "What can I do with pepperoncini" and to be honest, there are not a lot of options! Sandwiches, salads, etc, but I wanted something different.


I was inspired by a few different things I found and decided to go with it. I used 3 types of green pepper (you do not need to do this, especially if you can't find all 3 at your grocery store), but they do give it that classic "southwest" flavor (read: it tastes like queso), Calabrian chilis, and chives. I also was considering topping with a cheezit (!!) mixture, but went with a more mild and sweeter ritz cracker, and glad I did.

When I tell you this is now one of my favorite recipes, I'm not lying. I had to stop myself from eating the entire thing. It's perfect for a Football Sunday or just a veg-out moment where you want to eat something slightly less healthy but super fun and satisfying. It's giving chili cheese dip without the chili. Enjoy
